Pea, Mint and Walnut Dip
Ingredients
1 cup frozen peas (Thawed)
1/3 cup dry roasted walnuts
2 TBS olive oil
2 TBS fresh lemon juice
3 tsp organic vegetable stock
1 tsp crushed garlic
2 tsp chopped mint
Pea, Mint and Walnut Dip Method
Puree peas, walnuts, olive oil, lemon juice, veggie stock and garlic until smooth.
Remove mixture to a bowl and stir in the mint.
Enjoy with celery or carrot sticks.
