Pumpkin Hummus Recipe

Plant strong lifestyle for micronutrient sufficiency

This Pumpkin Hummus Recipe is quick and easy to make and packed with nutrition and it’s vegan! It makes a delicious dip for veggies and croutons.

Ingredients:

  • 500g peeled cubed Pumpkin
  • Olive Oil
  • 2 Cloves crushed garlic
  • ½ Lemon, juiced
  • 2 TBSP Tahini
  • 400 g soaked Chickpeas
  • Himalayan salt and ground black pepper

Method:

  • Heat the over to 200C
  • Generously sprinkle Himalayan salt and the crushed garlic over the pumpkin
  • After 25 minutes of baking, sprinkle with olive oil
  • Bake for further 20 minutes
  • Once cooled, place pumpkin and the cooking juices in a food processor or blender
  • Add the lemon juice, tahini and chickpeas
  • Salt and pepper to taste

For some pizzaz, serve in hollowed pumpkin.
