Lentils for Sasha B

Delish Lentil-Carrot-Celery dish

Lentils are an excellent source of B vitamins, iron, magnesium, potassium and zinc. They’re also a great source of plant-based protein and fibre. This meal (Lentils for Sasha B) will satisfy your taste buds and fill your belly while enhancing your brainpower.

Serves 2-4

Lentils for Sasha B Ingredients:

  • 1 x pack of brown or green lentils
  • 5-6 medium carrots, chopped
  • a cup of chopped celery
  • tin of organic tomatoes
  • a handful of cherry tomatoes halved
  • 1 x medium red onion, chopped
  • Crushed garlic to taste
  • Himalayan salt and ground black pepper
  • 2 x 500 ml Organic vegetable stock
  • your favourite fresh herbs (coriander, basil, rocket, parsley etc)
  • Broccoli or alfalfa sprouts
  • Two handfuls of fresh spinach, chopped (Optional)

Method:

  • Soak the lentils overnight in filtered boiling water
  • In the morning, strain and rinse.
  • Place lentils, carrots and celery in a pot, with sufficient liquid organic vegetable stock
  • Bring to the boil and then slow cook on low heat until cooked through (30-45 mins)
  • Add the spinach 10 minutes before the end of cooking time
  • Strain and set aside. (Retain the liquid to add later)
  • In a separate pan, saute the onions and garlic (use vegetable stock rather than oil to prevent sticking).
  • Now add the tinned tomato and season with salt and pepper.
  • Allow to simmer for 10-15 minutes
  • Now add the lentil mix by the spoonful until the desired ratio and consistency is reached.
  • Add the fresh cherry tomatoes
  • Garnish with sprouts, the fresh herbs and basil pesto
